RAGI MUDDE (RAGI BALLS)
One of the most preferred staple food of the rural Karnataka
like places in Mandya and many other places is this RagiMudde. The speciality
of this food lies in the fact that it has to be just gulped and not chewed like
all other foods. This food is the most protein filled food which just is the
reason for the strength of the farmers!!
The recipe of this protein filled energetic recipe is like
this given below.

preparation:
Water is heated with salt in a vessel with wide
opening.
When water starts boiling,2 tea spns of flour is
added and mixed. Then the mixture begins to thicken.
Remaining flour is added after it starts boiling.
Spoon shouldn’t be used to mix it, just leave it as it is.
Now the fluidstarts rising abound the dry flour.
Leave it as it is for about 5 mins.
Now push the dry flour and spread it down with
the spoon so that it is covered with liquid.
On a low flame, let it cook for 10mins. Take off
from the heat and with the help of muddekolu or a
normal wooden spoon mix it very well, lumps should be removed fully.
When the mixture is still warm, apply water to
hands and shape it into balls of the size required.
Cover it with a damp towel to avoid drying up.
These are usually served with some kind of thin gravies like bassaru or massaru.
Some people also serve green chilies and raw
onion with them. Spoon cannot be used to eat this. It has to be typically eaten
with hands.
Take out a small piece of mudde should be dipped in gravy and
has to be eaten directly.It shouldn’t be chew while eating.
People who are planning to make it, please be careful while
making it as it should be very careful whiling boiling and this is one recipe
which requires least number of ingredients and is easier to cook.
I bet, it is difficult to adjust to this kind of gulping
